Hi I’m Dallas
I am a gluten intolerant 24 year old American gal with a Culinary Arts degree, working on a Bachelors degree in Comparative Cultural Studies. I am a lover of culture, a lover of travel and above all a lover of food!
Currently, I am 1 of 75 participants living in Germany on a scholarship from the Congress Bundestag Youth Exchange for Young Professionals 2011/2012.
I started this blog because during my anthropology research on people who are gluten intolerant I found that almost every single person I interviewed did not want to travel for fear of not finding food to eat! I want my fellow gluten intolerants and Celiacs to have no fear and see that traveling can be done when even on such a strict diet as ours.

As a French parisian and a good friend of the Biosphäre boutique, I can say, you did a great job with his picture and with soon to come comments on his cute Parisian Epicerie.
I just hope people can discover & support his shop before it totally disappears… Supporting small independant boutiques has become crucial in our world where big corporations and major brands are buying smaller businesses.
hey! The post is finally up… I took that picture right before my camera completely died and it wasn’t really focused unfortunately. I agree, it is such a wonderful shop! I hope more people find out about it and support the business because it is completely necessary for people like myself who depend on those like Fred to provide us with foods we can eat that don’t taste like cardboard

The only bagel I found was at the Whole Foods store near Union Square. The brand is Udi’s, pretty good but definitely not boiled first so the crust is just like that of white bread, just shaped into a circle. Good luck in NY!
